A few words about our noodles. We currently produce our noodles in cooperation with a Japanese company based in Düsseldorf. In order to achieve the best possible result, we use Japanese noodle machines and only Japanese wheat flour.
We have tried a lot ourselves, but after trying around 25 different flours from different countries, we realized that this is the only way we can really give you an authentic taste experience, as traditional ramen noodles need to be a little “elastic”.
We have often been asked why we don’t want to offer noodles of different thicknesses. To be honest, we’ve thought about it too! We are of course aware that different kind of noodles would be better suited to different tastes, but due to the size of the kitchen and the exact cooking times, this is unfortunately not possible at the moment. However, we are already looking for a suitable solution!
As already described, our traditional Japanese ramen noodles are made from wheat, which gives them their characteristic elastic bite.
For guests with gluten intolerance, we offer soba noodles as an alternative. Soba noodles are traditional Japanese noodles made from buckwheat flour and have a nutty flavor and firmer texture.
This gluten-free option may slightly alter the authentic ramen taste, but makes for a tasty and easily digestible meal!
