We want to be as transparent as possible and give you an insight here too.
As our kitchen is quite small, we unfortunately only have space for two deep fryers. We use them as follows:
This deep fryer is used exclusively for frying karaage (chicken pieces).
This fryer is used for frying tofu and our delicious vegetable tempura. We also use it to deep-fry our karaage a second time to give it a crispy finish. Before the second frying, the karaage is already fully cooked.
Even though tempura and tofu are never deep-fried together with the karaage, we would like to point out the possibility of cross-contamination.
Unfortunately, we do not have another option due to the limited space available in the kitchen.
If you order our delicious homemade pastes for seasoning, please make sure that only the pastes for vegan dishes are actually vegan. We use katsuobushi or bonito flakes in almost all other sauces and pastes. Katsuobushi is fish that has been smoked and then dried.
Even though it is not explicitly labeled as vegan on our menu, we wanted to point out again that our kimchi is not vegan. Fish sauce is used in the production of both our homemade kimchi and the Korean imports.
If the way our ramen is prepared is not acceptable to you, we can of course understand that and would recommend our delicious, slightly spicy Tantanmen ramen. Here, any cross-contamination with other, non-vegan foods is ruled out.
When making our homemade lemon tea, we use honey – which is known to be non-vegan – among other things. A suitable alternative would be a cool, vegan and gluten-free Fritz!
