For both our Tonkotsu broth and our Chashu, we only use PQA pork from the Ardennes, which is characterized by its outstanding quality and unique taste.

The pigs are kept in Belgium, in the picturesque Ardennes, in a species-appropriate and sustainable way and can move freely all year round. They are reared without antibiotics or genetically modified feed, which results in particularly tender and juicy meat. The region is known for its clean environmental conditions and traditional breeding methods that prioritize animal welfare. PQA pork is rich in nutrients, contains less fat and stands out for its aromatic profile.

However, there is one disadvantage for us. According to Obaa-chan (my wife’s grandmother), the original recipe calls for “old, fat” pigs, as the broth’s flavor is much more pronounced with them. Unfortunately, this doesn’t work for us after consulting with our butcher, because the animals are raised and kept under ideal conditions, constantly moving outdoors, which results in significantly less fat.

So we had to make a few small changes for our delicious tonkotsu ramen.

The lower fat content of the pork belly we use for our homemade chashu is also one of our trademarks!
